Upma is a very popular recipe from South India. It is made with Sooji (Rava) with fine structure or sometimes thick in structure.

Best time to make – Morning/Evening breakfast
1. Rava ( Sooji ) -1 cup (approx.100-120 gm)
2. Onion (Finely Chopped) -1.5 cups
3. Tomato (Finely Chopped)- 1 cup
4. Ginger (Crushed)- 1 tablespoon
5. Green Chilly (Chopped)- 2 pcs
6. Curry Leaves (Chopped)- 7-8 Leaves
7. Mustard Seeds- 1 teaspoon
8. Cummin Seeds- 1 teaspoon
9. Chana Dal- 1 teaspoon
10. Urad Dal- 1 teaspoon
11. water – 2.5 cups
12.Orange Carrot (Finely Chopped) (Optional) - 2 tablespoon
13. Green Peas- 2 tables spoon
14. Coriander leaves(Finely Chopped)-2 tablespoon
15. Oil/Ghee – 2 tablespoons
16. Salt- as per taste
17. Sugar- 1 tablespoon
Finely Chop Onion, Tomato, Green Chili and coriander leaves. If you are adding carrots, that also needs to be chopped vertically.
Heat a pan or Kadai. Add Rava (Sooji) in it.
Roast Rava until some of its content looks separate and do not allow Rava (Sooji) to turn brown.
Switch off the flame and keep aside roasted Rava (Sooji).
Take another vessel and add water to it and boil it.
In the pan, add oil/Ghee and other masala ingredients (Urad dal, chana dal, Cummins seeds, Mustard seeds, curry leaves, green chilies, ginger)
Fry all these ingredients on medium flame.
Then add chopped onion, chopped tomato, green peas and chopped carrot(if you are adding).
Mix this mixture well and cook it well for 5-8 min by the closing lid on the pan.
Now open the lid and check the mixture. If all ingredients are cooked well, then add Rava (sooji) to it.
Mix Rava (Sooji) well and add salt and sugar to it.
Now add boiled water to this mixture and mix it well.
Let Rava(sooji) cook well for another 6-8 min.
Check if Rava has not stuck to the pan. Add additional water if required.
Now switch to gas and serve hot Upma with coriander and lemon juice sprinkled on it.
