Dal Bati is one of the main dishes from the Rajasthani cuisine. Batis are prepared in different style. They are either baked or fried. But, they are mainly prepared with the whole wheat flour, semolina, ghee, carom seeds, fennel seeds and besan. Dal required for Dal bati is also little different from our regular dals in meals. It is usually prepared with all mixed dal pulses.

Ingredients -

whole wheat flour

For Dal -

Chana Dal

5 tablespoons

​Toovar Dal

½ cup

​Green moong dal

​Urad Dal

​Onion (Chopped)

​Tomatoes (Chopped)

​Coriander powder

​1 tablespoon

Turmeric powder

​Garam masala powder

½ tablespoon

​Fresh coriander leaves (chopped)

​2 tablespoon

For Churma -

Whole wheat flour

​1 cup

Almonds ( Crushed )

​2 tablespoons

Cardamom powder

​¼ tablespoon

Sugar ( powdered )

​4 tablespoons


Preparation of Batis-

1. Combine all the ingredients of the batis in a large bowl or mixing bowl and prepare bati dough.

2. Make a small-sized ball from the dough to prepare batis.

3. Now flatten tohse balls with the hand and make small indention at center.

4. Now take a large pan or kadai and add sufficient water to it to boil those batis.

5. Turn the batis in between so that they stick to the bottom of the pan.

6. After 15 minutes the batis would be boiled well. Take the mout of the water and let them cool down.

7. Heat the ghee in the same kadai removing water and deep fry those batis once they cool down completely.

9. Fry the rest of the batis in a similar way and place them on transparent paper to drain the extra oil.

Preparation of Dal-

10. Mix all dals in a pressure cooker vessel. Clean them with the water and cook them with 3-4 vessels in the pressure cooker.

11.Let the pressure cooker cool down and meanwhile prepare the rest of the ingredients for dal.

12. Once the pressure cooker cools down, in another kadai, Heat the ghee and add cloves, bay leaves, cumin seeds, green chilies, asafetida. Sauté them on medium flame.

13. Now add chopped onion, garlic paste and sauté them for 2-3 mins.

14. Add coriander powder, turmeric powder, chili powder, garam masala powder and cook the mixture well for 2-3 min.

15. Now add cooked dals in the mixture and mix it well. Add salt and water as per requirement. Keep stirring occasionally.

16. After 10-15 min, dal would have got better structure and have mixed well. Add chopped coriander and switch off the flame.
